Four Delicious Fall Treats

Welcome back to Coffee with Kaydee, and welcome back to another autumn themed blog post! Today I'm sharing my absolute, all time favorite fall desserts. I recently shared in a blog post that one of my goals this Autumn is to bake something every week. Baking makes me so happy and I totally have a sweet tooth. It’s so nice to create something delicious, who can beat the sweet aroma that fills your home when you bake? The coziness that baking adds in the Autumn is unmatched. It truly is such a fun activity! If you are looking for a hobby to get into that makes you feel warm and cozy and let’s your creativity get exercised I 10/10 recommend baking.

While I shared on Instagram the list of things I want to bake, I thought I would share 4 delicious fall treats here. If you’re looking for something delicious, pumpkin flavored, and easy to make, you’ve come to the right place! I shared a similar post years ago, and I went back to make sure I share some different delicious recipes this time. I hope you enjoy! I love baking but I am not yet at the place to come up with my own recipes, and I don't know that I ever will. That makes me extra thankful for all the talented people that can come up with delicious recipes! 1 // Pumpkin Snickerdoodle Cookies

A delicious twist on your classic cinnamon snickerdoodle cookies! This recipe doesn't make a lot of cookies, so you may want to double it if you have a large family. It's super easy to make, but you do have to refrigerate the dough for 30 minutes before baking, so be sure to include that in your allotted baking time! Ingredients


-1 and 1/2 cups (190 grams) all-purpose flour, spooned & leveled

-1 teaspoon pumpkin pie spice

-1/2 teaspoon ground cinnamon

-1/2 teaspoon baking soda

-1 teaspoon cream of tartar

-1/4 teaspoon salt

-1/2 cup (115 grams) unsalted butter, softened

-1/2 cup (100 grams) granulated sugar

-1/4 cup (50 grams) light brown sugar

-1 egg yolk room temperature

-1 teaspoon pure vanilla extract

-1/4 cup (60 grams) pumpkin puree

For the cinnamon sugar coating:

-2 tablespoons (25 grams) granulated sugar

-1 teaspoon ground cinnamon




2 // Pumpkin Cream Cheese Bread

There is nothing I love more than the combination of pumpkin and cream cheese. This is like the easier, less time consuming version of the pumpkin roll. The pumpkin roll does have more cream cheese, but if you just want something you can easily whip together with the same flavors as the pumpkin roll, here ya go! It's super moist and not overly sweet, it would be great for company or even a quick breakfast snack! I'll definitely be baking this again this fall.


Ingredients

For the Cream Cheese Filling:

-8 oz cream cheese (softened)

-1/2 cup sugar

-1 large egg

-1 TBS all purpose flour

For the Pumpkin Bread:

-1/2 cup oil (vegetable, canola, coconut, etc)


-1 cup pumpkin puree (not pumpkin pie filling)

-1 cup brown sugar

-1/2 cup white sugar

-2 large eggs

-1/4 cup milk

-1 2/3 cup all purpose flour

-2 tsp cinnamon

-1/4 tsp ground nutmeg

-1/4 tsp ground cloves

-1 tsp baking soda

-1/2 tsp salt



3 // Pumpkin Spice Cheese Cake


Hands down, out of all desserts known to mankind, cheesecake is my absolute favorite dessert. I have it every year for my birthday. Now, adding in pumpkin spice, that just takes it to the next level! Here is a recipe for some yummy pumpkin spice cheese cake! (Photo is not mine, it is from the recipe website, linked in this post).


For the crust:

-1 1/2 cups gingersnap crumbs

-6 tablespoons butter melted

-1 tablespoon sugar

For the cheesecake:

-22 ounces cream cheese 2 3/4 blocks (room temperature)

-2/3 cup white sugar

-2/3 cup brown sugar

-1 teaspoon vanilla extract

-15 ounces pumpkin puree

-1 teaspoon cinnamon

-1/4 teaspoon nutmeg

-1/4 teaspoon cloves

-10 ounces sour cream room temperature (about 1 cup + 2 tablespoons)

-3 large eggs whisked, room temperature



4 // Pumpkin pie twists

Is your bestie coming over and you want to greet her with a warm, sweet smelling dessert and a cup of coffee, but you have two kids and don't have time to cook something intricate? Here ya go! Throw this little quick treat together in a short time with few dishes, and your bestie will thank you and you will feel like a domestic goddess. (Photo not mine!)


Ingredients

-refrigerated crescent roll dough 1 TUBE

-1/2 cup pumpkin puree

-1/4 cup brown sugar

-1 Tablespoon maple syrup

-1 teaspoon pumpkin spice

-2 Tablespoons melted butter

-1 Tablespoon sugar

-1/2 teaspoon cinnamon

-whipped cream for dipping OPTIONAL


5 // Pumpkin Spice Latte


Not in the mood to bake? That's okay. Craving a fancy Starbucks drink but don't want to spend $6 on coffee? I got your back. Here is a super simple, quick recipe for a homemade pumpkin spice latte that will make you feel warm and cozy! Make this, grab a blanket, crack open a delicious book, and soak in the gloriousness that is AUTUMN. (not my photo!)


Ingredients

-2 cups milk (dairy or non-dairy)

2 tablespoons pumpkin puree, or more to taste, see our homemade pumpkin puree recipe

-1 to 3 tablespoons sugar, depending on how sweet you like it

-1 tablespoon vanilla extract

-1/2 teaspoon pumpkin pie spice, plus more for serving

-1/2 cup strong hot coffee

-Whipped cream, for serving
