My Favorite Pumpkin Recipes

Can you believe we are already through the majority of October? Thanksgiving is a month away! Time flies so quickly it blows my mind sometimes. Before October fades away, I wanted to share with you my favorite pumpkin flavored things. Something interesting to learn about me is that I thoroughly enjoy baking, but I'm not a huge fan of eating it afterwards (NO! Not because it doesn't taste delicious!). One piece of pie or a couple cookies, and I'm pretty much good and ready to bake something new. The exception is Thanksgiving day. Give me all the freaking pie you have. Since I still enjoy baking when I can, I thought I would share my absolute favorite Fall recipes! I wish this was going to be an extensive, top 10 recipes but I only have 4 favorites so that's all you get! There are only four but they are delicious.
Downeast Maine Pumpkin Bread
This pumpkin bread is absolutely delicious. It is the perfect amount of moist and dense! It is sweet but not too sweet and is the perfect afternoon snack. The best part is that it is dairy free (I think that is why it is so moist)! This is the bread I mentioned in my last post that I sent to my friends. It makes three whole loaves, so if you have a small family like me, it is the perfect recipe to share with someone you love!
Ingredients:
-1 can (15 oz) of pumpkin puree
-4 eggs
-1 cup of vegetable oil
-2/3 cup of water
-3 cups white sugar
-3 1/2 cups all-purpose flour
-2 teaspoons baking soda
-1 1/2 teaspoons salt
-1 teaspoon ground cinnamon
-1 teaspoon ground nutmeg
-1/2 teaspoon ground cloves
-1/4 teaspoon ground ginger
Pumpkin Spice Pancakes
While I haven't had the chance to make these yet this year, they are the best pancakes ever! This recipe is so light and fluffy! This makes for a wonderfully sweet breakfast on a cool Autumn morning.
Ingredients:
-1 1/4 cups all-purpose flour
-3 tablespoons of sugar
-2 teaspoons of baking powder
-3/4 teaspoon of cinnamon
-1/4 teaspoon of nutmeg
-1/4 teaspoon of cloves
-3/4 teaspoon of salt
-1 1/3 cups of milk
-3/4 cups of pumpkin puree
-4 large eggs separated
-1/4 cup of melted butter
-1 teaspoon vanilla extract

Pumpkin Cookies
I found this recipe at the beginning of the season and it quickly became my favorite. It is super simple and makes so many cookies. The glaze is delicious and easy to make, but the cookies also taste amazing without the glaze! These cookies are soft and moist. They are a bit time consuming but are so good. Try it and I know you will be adding it to your yearly baking list too!
Ingredients:
Cookies:
-2 1/2 cups all-purpose flour
-1 teaspoon baking soda
-1 teaspoon baking powder
-1 teaspoon ground cinnamon
-1/2 teaspoon ground nutmeg
-1/2 teaspoon salt
-1 1/2 cups granulated sugar
-1/2 cup butter (1 stick), softened
-1 cup pumpkin puree
-1 large egg
-1 teaspoon vanilla extract
Glaze:
-2 cups sifted powder sugar
-3 tablespoons of milk
-1 tablespoon melted butter
-1 teaspoon vanilla extract
Pumpkin Roll
I saved the best for last. This Pumpkin Roll recipe is my all time favorite. I love cream cheese and the combination of cream cheese filling and pumpkin is amazing! This is on my to do this coming weekend and this recipe I will eat, probably all of it in one sitting, haha. I have loved this recipe since I was a young teenager and I know you will love it too!
Ingredients:
Cake:
-1/4 cup powder sugar
-3/4 cup all-purpose flour
-1/2 teaspoon baking powder
-1/2 teaspoon baking soda
-1/2 teaspoon ground cinnamon
-1/2 teaspoon ground cloves
-1/4 teaspoon salt
-3 large eggs
-1 cup granulated sugar
-2/3 cup of pumpkin puree
-1 cup walnuts, chopped (optional, and I never add them, better without!)
Filling:
-1 packaged (8 oz.) cream cheese
-1 cup sifted powder sugar
-6 tablespoons of butter/margarine softened
-1 teaspoon vanilla extract
-Powder Sugar (for decoration)
